Oven-Roasted Potatoes Recipe

A fool-proof recipe! Crisp on the outside and fluffy on the inside, roasted potatoes are a simple, easy side dish that goes with pretty much any meal! From roast chicken to a great steak! Feel free to get creative with seasonings: Add your favorite seasonings based on what’s in your spice cupboard or what herbs are growing in your garden!

  • Feel free to adapt the amount of garlic used in this recipe.
  • If you don’t like parsley, you can use fresh chopped rosemary or thyme. Dried herbs would work just as well but go easy because they can overpower the flavor of the potatoes.
  • Roasting potatoes in a hot, preheated oven set at a high heat gives you the best, crispy results with melt-in-your-mouth fluffy interiors.

How to roast potatoes

Making oven-roasted potatoes tossed with Parmesan is so incredibly simple that it’s our go-to side dish!

  • The first step to making great oven-roasted potatoes is choosing the right potato variety. Use baby red potatoes or mix with small Yukon golds. German butterballs or fingerling potatoes would also be a good choice.
  • Next, preheat the oven to a very hot temperature – 400º F (200°C).
  • Wash potatoes and chop your potatoes into similar-sized pieces – we like them quartered or halved if the baby potatoes are already small. This step is crucial to ensure even cooking.
  • Parboil potatoes in boiling water for 5 to 8 minutes to precook them. They’ll be more tender on the inside when roasting.
  • To guarantee an even distribution of flavor, mix the seasoning together with butter and freshly grated parmesan before tossing in your potatoes. Toss the potatoes in the parmesan mixture evenly.
  • Transfer the potatoes to a sheet pan and spread them out into 1 layer. Roast in the oven for 40 minutes to 1 hour or until browned and crisp. Flip once or twice with a spatula during cooking in order to ensure even browning.

What temperature to roast potatoes

As we said earlier, roast potatoes at least 400°F (200°C) for the best, golden results. Depending on how busy you are in the kitchen, you can cook potatoes at a lower temperature if necessary – but you may need a longer roasting time. This leads us to…

How long to roast potatoes

For crispy roast potatoes on the outside, roast them at a higher temperature for the best, golden results: normally at 400°F (200°C) for 40 minutes to 1 hour, while turning them a couple of times to ensure they crisp up all over. Garlic and parmesan will stick to the potato flesh and give that crisp golden crust. If you need more time, roast at 350ºF (180ºC) for 1 hour to 1:20 hour.

Directions

How To Roast Potatoes withGarlic Butter Parmesan

1.Preheat your oven to 400ºF (200°C) and place a rack at the bottom.

2. Wash the potatoes and then slice them in quarter

3. Grease a large baking sheet with non-stick spray or olive oil and set aside.

4. Parboil baby red potatoes in boiling water for 5 to 8 minutes to precook them. The potatoes will be more tender on the inside when roasting.

5. In a large bowl, combine 1/4 cup of olive oil, garlic, salt, herbs, pepper, and parmesan cheese, mixing to combine. Add a little more olive oil if the parmesan cheese has absorbed most of it.

6. Toss parboiled potatoes through the garlic parmesan mixture to evenly coat.

7. Arrange the potatoes on the prepared baking sheet, cut side down, and in a single layer.

8. Roast the potatoesfor 25 minutes, turning after 15 minutes with tongs or a spatula, until potatoes are browned and crisped at the edges.

9. In the meantime, gently melt butter in the microwave and combine with fresh chopped parsley. Remove the roasted potatoes from the oven, and drizzle with the butter parsley sauce. Add bacon bits, and toss to coat well.

10. Serve your roastedpotatoes with garlic butter and parmesanimmediately. Enjoy! ❤️

Roasted potatoes tips

  • For extra golden potatoes, youcan broil the potatoes for 2-4 minutes after roasting.
  • Parboiling potatoes is optional, if you want to skip this step, just roast potatoes for 35 – 40 minutes.
  • Allow the potatoes to cool down for a couple of minutes on the bakingsheet before removing them. This will ensure parmesan sticks to the potatoes, not on the baking sheet surface.
  • The best part is when you pour the melted butter with parsley over the roasted potatoes. Do not skimp on this!

What to serve with roasted potatoes

Meat, poultry, and even fish – anything goes great with these crispy, garlicky potatoes!

  • Instant Pot Pork Chops in Creamy Mushroom Sauce
  • Oven-Baked Chicken Bites
  • Tuscan Baked Chicken
  • or a perfect Creamy Garlic Tuscan Salmon With Spinach and Sun-Dried Tomatoes

What to do with leftover potatoes

You can keep leftover roasted potatoes for 2 days in an airtight container in your fridge. Reheat in the oven, until heated through. You can cover the potatoes with foil to avoid drying up.

These roasted potatoes leftovers will be great in a potato salad, or as a topping in your soups and stews.

These potatoes are absolute perfection. At first I thought it was too over seasoned, but I was wrong. Followed the directions exactly and they turned out so good! There were no leftovers, which means the family liked them as well. I was told I'd have to make these again, which I definitely will!!

These potatoes are out of this world good. We had no leftovers!! Thank you for a terrific recipe. I like to make things ahead so I can enjoy time with friends when they come over---I did cut the potatoes ahead and place in a ziplock bag & coated with olive oil, fresh garlic & seasonings/some parsley & put in the fridge for a few hours prior to roasting-- I added the parmesan right before baking-- I've made this without the parmesan and was still wonderful. It worked wonderfully to prep ahead, I just squeezed as much air from the bag as possible. Yummmmy recipe. Thank you for sharing it.

Potatoes turned out great. Husband and I both loved them. Only problem I had was they were still hot from parboiling when I tossed with Parmesan mixture. Parmesan was melting into a disintegrated mess. Ended up tasting great but they probably are better when they are tossed correctly with the Parmesan. I don’t know how others have done it, it seems like it should be an easy fix. Where did I go wrong?

To those who love the crispness, It's important to note that the main way you achieve this from tossing is actually to like, really, really toss them thoroughly. The recipe/article doesn't bother to mention this but while yes, you're tossing to coat Iin Ingredients, but it also breaks down the starch, which eventually turns into somewhat of a liquid/paste (you want that) that should coat all the potatoes. THAT is actually what will fry and turn the outside of the potatoes crispy when cooked.

FAQs

Why aren't my oven roasted potatoes crispy? ›

If you over-crowded the pan so that there isn't enough space for the potatoes to rest on the pan without touching each other, it will prevent the water from evaporating and making the potatoes crispy. You can always try to broil the potatoes for 1-2 minutes to crisp them up at the end of baking if necessary.

How do you keep garlic from burning when roasting potatoes? ›

How do you keep garlic from burning when roasting potatoes? I find crushing the garlic and tossing it with the oil and mustard helps prevent it from burning. If you find your garlic burns easily when roasting, you can always chop the garlic cloves into larger chunks!

Should you remove starch from roast potatoes? ›

This is, in my opinion, an old wives tale that actually is useless. Unless one shreds the potatoes, then boils them and then uses some chemical process to remove the starch, there will always be starch in the potato. Cook them any way you want but don't waste time on this useless ritual.

How do you roast potatoes Bobby Flay? ›

Directions
  1. Preheat the oven to 425 degrees F.
  2. Toss the potatoes with the canola oil, garlic paste and salt and pepper to taste. Place on a sheet tray and roast until cooked through and golden brown, 25 to 30 minutes.
  3. Remove from the oven and immediately fold in the herbs.

Why are my potatoes still hard after cooking in the oven? ›

Size and Cut: The size and cut of the potato pieces can also affect their cooking time. Smaller pieces will cook faster and become softer than larger ones. If the potato cubes were too large or unevenly cut, this might result in some pieces remaining crunchy.

Should you always boil potatoes before roasting? ›

Do I have to boil potatoes before roasting? Not necessary but this can help get the perfect consistency and crispiness. Make sure you boil them but leave them a bit al dente and they will crisp up perfectly in the oven.

Why cut garlic before roasting? ›

Speedy roasted garlic trick: While less visually stunning, separating the head of garlic into individual cloves will make the cloves roast more quickly. Leave the cloves intact and covered with their paper skin, toss with olive oil, and roast in a foil packet until soft.

Why dry potatoes before roasting? ›

Drying the potato after washing it ensures having a crispy potato skin, since a wet potato just might not dry out in the oven enough. Having crunchy potato skins is not only satisfyingly delicious, but they are also a great source of nutrition.

How to stop garlic burning when roasting? ›

Roasting a whole head rather than individual cloves also protects the garlic from burning, because the paper-like skin insulates the garlic slightly from the heat of the oven.

Is it better to salt potatoes before or after roasting? ›

If you're roasting potatoes start-to-finish in the oven, you should always salt them after cooking. This is to avoid drawing out moisture while they cook and making the outer layer leathery.

Why do people soak potatoes in water before cooking? ›

Soaking potatoes in water helps remove excess starch. Excess starch can inhibit the potatoes from cooking evenly as well as creating a gummy or sticky texture on the outside of your potatoes. Cold water is used because hot water would react with the starch activating it, making it harder to separate from the potatoes.

Should you wash potatoes before roasting? ›

You should certainly rinse the potatoes — we prefer russets — to remove any dirt and debris. You can even give them a quick scrub with a vegetable brush. But you need to dry the spuds well after the bath. Excess moisture on the skin can seep into the potato during baking and cause soggy skins.

How does Gordon Ramsay make perfect roast potatoes? ›

In a video online, Gordon explained: “For crispy roast potatoes, you can depend on them, my tip is to parboil them, leave them to steam dry, then sprinkle them with semolina or flour, and then give them a good roughing up.”

Why didn't my roast potatoes go crispy? ›

First things first, it's important to not overcrowd the tray, with Curtis saying: “you can't put too many potatoes in the tray because they will steam. You want them to be dry, and that's how you get them crispy on the outside, fluffy on the inside.”

Why do you oil potatoes before baking? ›

A: Adding oil to potatoes before baking is perfectly fine, just a personal preference. Without oil the Idaho russet skin bakes up crispy, with oil the skin will carry a lot of the flavor of the oil so some people have a preference for using olive oil or peanut oil.

How to keep roasted potatoes crispy? ›

If you want to make this roast potatoes day before recipe and keep the potatoes crispy, ensure you put them in hot oil before baking them. This will help the potatoes stay crispy. If you're preparing roast potatoes in advance and find they have gone soggy in the fridge.

Why are my oven roasted potatoes soggy? ›

Roasted potatoes can become soggy if the water content in the potato isn't fully cooked. Different potatoes have different water content percentages. Also, be mindful of the oil. Potatoes can react like sponges; too much oil can make your potatoes appear to be soggy.

Why are my Roasties not crisping? ›

Here's a few ideas you could try:
  • make sure they're completely dry.
  • use more oil.
  • open the oven door so that the moisture leaves the oven.
  • use more heat, sometimes it's necessary (you could read it up in your oven's manual)
  • use potatoes that have less flour / starch. Use waxy potato types such as anya or russett.

How do you're crisp roasted potatoes? ›

To get those potatoes crisp again, Consumer Reports recommends reheating in a 400-degree oven, covering your potatoes with tin foil until warm, and then removing the cover for a final few minutes to allow the skin to crisp back up.
